Vinification Harvested by hand, unlike normal red vinification it is not necessary to reach complete phenolic maturity, so it is better to rely on technological maturity in order to obtain the desired sugar content and the right acidity. However, it is advisable not to anticipate the harvest too much to avoid obtaining herbaceous, sour products that are not at their most aromatic. The grapes are vinified “in white” (ie without contact with the skins). The fermentation with certified organic yeasts is carried out at a controlled temperature.
