Origin of the vine The Passerina vine derives its name from the small size of the berries and from the fact that sparrows show a particular predilection for its grapes, characterized by a particularly tasty pulp. Widespread in the Marches and Abruzzo, it has only recently been relaunched as it was forgotten and replaced by the more productive Trebbiano.

Vinification The grapes are harvested by hand in mid-September when the grapes have an acid content that guarantees freshness to the wine. The fermentation, with certified organic yeasts, is carried out at a controlled temperature. The maturation at the end of fermentation on the good lees gives it complex and important tones.
