Origin of the vine It is the other grape color of Montepulciano. The “Cerasuolo d’Abruzzo” wine is obtained from 100% Montepulciano grapes, which can be vinified “in white” (i.e. without contact with the skins) or left to ferment with the marc for a few hours. The wine combines the delicacy and freshness of white wines with the strength and power of reds. The name of this wine derives both from the Abruzzese “cirasce” and from the Neapolitan “cerasa” but also from the ancient Greek “cherasion”, which as it is easy guess means “cherry” to recall the typical color and also the taste, which often recalls that of the small ripe red fruit.

IN THE BASEMENT
Vinification Harvested by hand, unlike normal red vinification it is not necessary to reach complete phenolic maturity, so it is better to rely on technological maturity in order to obtain the desired sugar content and the right acidity. However, it is advisable not to anticipate the harvest too much to avoid obtaining herbaceous, sour products that are not at their most aromatic. The grapes are vinified “in white” (ie without contact with the skins). Fermentation with native yeasts is carried out at a controlled temperature. The maturation at the end of fermentation on the good lees gives it complex and important tones.
IN TASTING
View Intense and brilliant cherry pink colour.
Smell Fruity with a marked olfactory presence of red fruit such as raspberries and pomegranate. Sapidity and tannic sensation give great vitality to the wine.
Taste Fruity and floral notes linked to tannins and well-integrated acidity make the wine lively and fresh.
IN SERVICE
Recommended pairing Perfect to accompany appetizers and fish soups, pasta dishes, delicate cheeses, roasts as long as they are light. This wine is also perfect with light dishes such as pizza.
