Origin of the CHARDONNAY vine: according to many its origins have never been clear, for some scholars they are Middle Eastern, other accredited sources claim it as originating from the French municipality of Chardonnay (chardonn = thistle) in Burgundy. Introduced in Italy in the 1970s, it was often confused with Pinot bianco from which it was distinguished by the denomination Pinot giallo.
SAUVIGNON: the name Sauvignon has the first meaning of “wild plant”. Vine of French origin, it is strong, robust, vigorous and productive, but requires suitable climatic and soil conditions. If grown in areas that are too hot, it can lose its freshness and typical aroma.

IN THE BASEMENT
Vinification The grapes are harvested by hand in mid-September when the grapes have an acid content that guarantees freshness to the wine. The fermentation, with native yeasts, is carried out at a controlled temperature. The maturation at the end of fermentation on the good lees gives it complex and important tones.
IN TASTING
View Brilliant with a straw-yellow color with greenish reflections.
Smell Aromatic complexity with floral aromas and hints of grapefruit, passion fruit and lemongrass.
Taste The softness of the Chardonnay and the freshness of the Sauvignon come together in this wine, on the palate it is supported by a citrus acidity balanced by the fatness and warmth of the alcohol.

Recommended pairing Ideal as an aperitif and stimulating with raw fish, seafood and fresh cheeses.
