Origin of the vine It has very ancient origins and belongs to the Trebbiani family. The name Passerina derives from the small size of the grapes and from the fact that the sparrows show a particular fondness for its sweet and yellow grapes. Also known between Abruzzo and the Marches as Uva d’Oro, Campolese, Scenciato and Pagadebiti. The latter precisely because of his ability to raise cash with very generous harvests.
Underestimated for many years due to the popularity of Trebbiano, it has returned to the limelight for the quality of its grapes in single-variety vinification and blends.

IN THE BASEMENT
Vinification The grapes are harvested by hand in mid-September when the grapes have an acid content that guarantees freshness to the wine. The fermentation, with native yeasts, is carried out at a controlled temperature. The maturation at the end of fermentation on the good lees gives it complex and important tones.

Sight Pale yellow with greenish reflections.
Smell Delicate floral bouquet of acacia and white flowers (hawthorn).
Taste Citrus, sour, fresh and lean.
